I agree with Raiders of the Lost Ark.
I use the beginning of Top Gun to test out any newly purchased audio equipment. You can't go wrong with Kenny Loggins and afterburners.
Also, I am surprised no one mentioned the Matrix.

Creativity at it's finest.

Lord of War had a great opening scene, starts off with all the casings on the ground, and then that one quote from nicholas cage that is just great, all the way to the following of the bullet to that "shocking" sort of ending.
Swordfish is another great opening.

I really like the opening credits in lord of war. when it shows a bullet being made and then used.

Saving Private Ryan was cool and to 1up your Star Wars one, I think the opening part of Space Balls was pretty funny.
