Assassin's Creed would be great remade.

Another good one to be redone is Super Mario 64 remade with a galaxy visual style. I would go bananas.

Shemue 1 and 2 HD. The Shemue franchise on the SEGA Dreamcast is phenomenal just like the Uncharted franchise is on the PS3.

Shemue came out in 1999 but it is like a game from current gen when it comes to the amazing story telling with the nice Japanase art.
