Though I'm not sure what timeline you'd end up in if you decided to go back to the future. Or would you cross over to the other timeline where you have your leg back, and in the other timeline there's a version of you without a leg?

This isn't possible. Space time does not work this way. You cannot travel backward in time, only move forward more slowly relative to something else.
