Odd as it sounds, I always included Assassin's Creed into the same territory as Uncharted or even Prince of Persia. They're not the same thing, obviously, but AC basically feels like a puzzle game where you climb on things to get through areas and what not, trying to get where you need to be, between bursts of action. Playing as Altair, Ezio or Connor have about as much stealth play as playing as Nathan Drake. Not a bad thing, as I like all three games, but, yeah, they're just action games.
Hitman's series has always been about stealth and subtlety and has been the reason I've liked them before. Just a matter of figuring out the best way of going about the job.
My favourite stealth based games, though, will always be the Thief franchise. Ahh, memories.
