GT5 i do agree with you but the other two i don't agree with. 

Here is why:

PS3 Assassins Creed 3 bundle will exist next week for $299 with 500GB, so adding it to this bundle would be pointless

PS3 Uncharted 3 bundle already exists for $269 with 250GB and a $30 voucher for dust 514. Again, adding this to the bundle would be pointless

Out of your 3 games, GT5 is the only game that have not been in a bundle. Uncharted 3 has been in bundles twice already, we don't need it in a bundle for a 3rd time and AC3 will be in a bundle next week.

There's also five games in this bundle, not four. Infamous Festival of Blood might be the first area of Infamous 2, but it's still got a different storyline, partially different graphics, and the enemies are different.

That's definitely a good bundle for newcomers to the PS3.  I want to get the new PS3 model, but will probably wait til the stand alone model is ~$150, since I aready own 2 PS3s and all of those games.  But, I will recommend this bundle to my friends.

I honestly said the same last year when MS desperatily tried to reach its ambiotous goal of becoming the no 1 console of 2011 that the Holiday bundles were so generous that it reeked desperation.

The point of the new Slim was to decrease manufactoring costs so that Sony could decrease the price of the PS3, without incurring a loss in profit.  It's not like they are selling the old Slim with 4 brand new games released in the last month or two.  It's not desperation, but a wise business move.

That's not exactly true.  Once all the regular slims are no longer available in stores, the demand may go up for them on Ebay.  Of course, there's no guarantee that will happen, but it could.
