If component cables aren't working too well for you, try S-video. Otherwise just try changing the options in the Wii Channel Menu until it looks better.
Don't blame the Wii, blame your TV. It even rhymes.
PS: You can also play with the TV settings, especially sharpness as someone else has already said.
