I can name a few off the top of my head as well:
Star Wars Battlefront 1 and 2
Euro 2004 Football
The Project Zero/Fatal Frame games (a bit ironic considering Nintendo now co-owns the series)
Pychonauts
Dead or Alive (The PS2 and Xbox each got games, but I'm not sure if they were the same)
Black
Brothers in Arms

Yep, I'd agree all of them, except Dead or Alive. DoA2 was DC only them ported to PS2, then after that the series became Xbox only. It was never really a multi-plat series again until recently, with DoA5.
I'd counter you with - Crazy Taxi, Sonic Adventure 2, Skies of Arcadia, Phantasy Star Online, Resident Evil 4, Code Veronica X, Viewtiful Joe, Star Wars: Bounty Hunter. I mean, that's nearly solely a Sega/Capcom list but it's stuff that either stayed on GC, wasn't on Xbox or wasn't on PS2.
But you know, of that list you posted, none of those games were published by companies who seemed "anti-Nintendo", it was just for whatever reason they weren't deemed to be financially viable on the Gamecube. Brothers in Arms didn't make it over, but Ubisoft still gave GC nearly everything else - Prince of Persia, Beyond Good & Evil, Rayman, Rainbow 6 etc.
I mean heck, Battlefront 1 & 2 didn't make it to the GC, but LucasArts brought over Star Wars: Jedi Outcast, Star Wars: Bounty Hunter from PC & PS2 respectively, and then they made Rogue Squadron II & III exclusive to the system. They might not have gotten all the third-party support, but they got plenty of good stuff.
Same with Black - EA decided not to bring it over for whatever reason, but they still released Timesplitters 3, Burnout 1 & 2, all The Sims games, etc.
I get that the support wasn't perfect, but 90% of the stuff that needed to be there was there.
