Ahh... no one has mentioned Lupin III yet... old but yet still very nice.
But I also like Fate/Stay Night and Trigun.

I can't forget to mention Hiyao Miyazaki films like Mononoke Hime (Princess Mononoke), Howl's Moving Castle, and some old ones like Laputa: Castle in the Sky or Nausica of the Valley of the Wind.

FLCL wins by a mile. It is not as much an anime as a 2 hour long music video. The scene where Mamimi sees Canti for the first time is amongst the very best I have seen in any anime.

 

 Of course, the best music scene of any anime ever is Haruhi singing God Knows.
