Ahh... no one has mentioned Lupin III yet... old but yet still very nice.
But I also like Fate/Stay Night and Trigun.
I can't forget to mention Hiyao Miyazaki films like Mononoke Hime (Princess Mononoke), Howl's Moving Castle, and some old ones like Laputa: Castle in the Sky or Nausica of the Valley of the Wind.
