So guys, I'm currently stuck. I've just defeated the gargoyles and rang the first bell. Where do I go from here?

Should I go back to the Undead Asylum, Anor Londo or go to kill the Capra demon? (or any other place that would be better) Basically, the next easiest area

You can't go to either the Undead Asylum nor Anor Londo before ringing the two bells. Your best bet is to go kill the Capra Demon so you can go to the Depths in search for the second bell.

Bring lots of poison&toxin recovery items (you can farm them off the Ents on the entrance of Darkroot Gardens) because you will be poisoned on Blightown

Wheres Darkroot Gardens?

It's near the blacksmith on the Undead Parish. The entrance is guarded by a Titanite demon, but you can outrun him easily (he only jumps around and vey slowly).

Well, i'm on my way to Nito as well (mostly because there are enemies on the Tomb of Giants that drop humanity, supposedly). The Catacombs are rather easy if you got a Divine weapon, so maybe do a speed run through the place till you reach the Tomb?

Best place to farm humanity is the rats on the sewers, even though their drop rate is 1/20. The ring is on Sen's fortress, if you follow the western rolling ball path (the one which leads to the elevator with spikes on top), there should be a broken wall there with the ring perched on a ledge.

Is there any way to light up that god forsaken place called Tomb of Giants? >_>. I could handle the darkness well, but it comes into unfair territory when you get two giant skeletons on a tiny platform with nowhere to run and that's the main path... >_>
