I used to like WWF Smackdown! back in the PS1 days (I never played any of the PS2 Smackdown and Smackdown vs. Raw games so I can't comment on those). And also WWF Attitude on PS1 (but Smackdown! controls were more streamlined and Attitude's controls were more needlessly complicated IMO). None of the pro wrestling games I tried this gen really sparked my interest in the way that the old wrestling games did. I rented WWE Smackdown vs. Raw 2010, WWE Legends of Wrestlemania and WWE All-Stars. Legends of Wrestlemania wasn't sim-like but it just didn't quite agree with me. Though I did love the nostalgia value of the game with all the old legends in the game. I didn't hold on to WWE All-Stars very much despite the more arcade-esque style because I found the reversal system very confusing. I'd hit R1 every time when prompted and I don't think I ever got a reversal (if so, rarely). I don't believe there was a tutorial in the game that explained that mechanic or maybe I just missed it. I also bought TNA Impact! a couple years ago. The game had mediocre reviews so it hit the bargain bin fast. Got it for $24 then. That game was pretty dissapointing. Though probably more fun to play with friends since it's less sim-like than SvR. I used to watch TNA wrestling back in 2003/2004 but then stopped watching TNA and WWE after that.
I didn't have a N64 so I never played the games developed by AKI (WWF No Mercy and the WCW stuff). I heard they were good.
I played Fire Pro Wrestling (unlicensed game) on the GBA (I believe it was a launch game) and that franchise was notorious for being sim-like. Though it does have a significant niche following. I don't believe they came out with a Fire Pro Wrestling game in a long time. The last one was on the PS2 I think.
