What for? GT games are the same. It's not like their is a new story, they overlap. No need, seriously and I love GT.

It may be possible, but the games are very similar and it may not profit.
I don't see why not, depends how popular the collections get, how much man power they have to spare and how much they want some relatively little but easy money

No. Unless Sony wantd to spend some millions to update some old games that basically are oudated and only Die-hard fans of the series care about.
