Spaghetti with a quick sauce made stir frying chili pepper, garlic and fresh cherry tomatoes in extra virgin olive oil (it's simply the Roman "olio, aglio e peperoncino" with fresh tomato added). Very tasty but also very quick, you can prepare easily the sauce during the 9-12 minutes necessary to cook the pasta.
This sauce is very good also spread on bruschetta.
As starter or main course, your choice, cured ham and mellon, another classic and very quick Italian dish, just the time to put the sliced ham on a plate and slice, remove the seeds and peel the mellon, 5 minutes are more than enough.
Fresh seasonal fruit for dessert: just wash it, it's ready.
My advice is to precook and refrigerate or freeze food. It saves time and money. Every sunday my girlfriend and I pre cook some food for the week. We boil pasta and veggies and refrigerate them,. We cook mexican rice(we do this in an oven too) and refrigerate it. We cook bacon, and sausage, chicken breasts, and what ever red meat/pork that is on sale that week and freeze or put it in the fridge. We use the oven to cook all the meats as its easy and cooks well. it takes about an hour or two every week to do the bulk cooking. After that we make plates from the food in the fridge and reheat in oven or microwave.
