The hardest part to start cooking, I think, is having the correct tools.
Once you got over that hurdle, everything will just depends on what you feel like making and just learn to put stuff together from there.
2 important items that I think is useful to learn how to use.
Pressure cooker - cook stuff really fast
Slow cooker (crock pot) - cook stuff really slow
Finally, the most important toolset... knives.
Don't buy cheap throwaway knives. Get a good set, which you can hunt for sales to get a good deal. You can mostly depend on a knives set that comes in 3 pieces.
- Santoku/chef knife
- Utility knife
- Paring knife
That's all you really need and keep on using them to get used to them.
You would think that sharp knives would make it more likely to cut yourself but it's actually the opposite. Sharp knife doesn't slip from what you want to cut and won't cause accidents. Just be extra careful at the begining as you get used to it.
Also, don't ever use your fingers to rub the sharp edge, even if you think you're rubbing on the flat side, you'll find a cut on your finger easily from a sharp knife.
ummm, yeah, it's gotten long winded, LOL.
