why would anyone want to play these "homemade" games when you can just as easily play the originals, where in most cases they are better?

Well, think of it this way, you have these games, and then you have potentially original games (depending on how the user's utilize the creation tools), all in one package. 
It also may be a hassle for some to download emulators for the particular games and then downloading them one by one (generally speaking, I personally have no issue downloading that stuff).
Rockstar: Announce Bully 2 already and make gamers proud!
Kojima: Come out with Project S already!

The way I look at is from a technical feat perspective. The fact that someone can create something like Minesweeper, Ace Combat or even flOwer (admittedly not always 100% accurately) is something I feel is commendable. I don't think that when MM made this game, they figured "I bet someone is gonna make flOwer". I like it because it shows what people can achieve, in some cases it's just as good as the pay to play stuff.
I'm gonna enjoy LBP2 because unlike LBP1, it goes beyond platformers, if you get bored of platformers you can try shooters, racers, RPGs, puzzlers- the list is endless and instead of having to pay for these other games, you can consider the LBP2 counterparts as a try before you buy version of the game.
Interesting fact, I heard people harp on about Ico and SoTC for a years but never once played either, I saw "homages" to these games in LBP1 and tried them, though I knew they weren't exact replicas, I got the "feel" for the games and what to expect, I know this doesn't sound believeable but it was because of LBP that I'm keen on playing Ico/SoTC when they are released.

but i think its awesome what they do, seriously some of the stuff looks really impressive. But at the same time it feels very, i dont know something similar to flash games, something you spend like 10-15 min on before it gets boring. But maybe its just me.

I actually agree with you on most of the games you play on LBP (in LBP1) but LBP2 is looking to have a greater level of variety assuming you know where to look, you might also find more quality games.
You know, when I see these games I cannot help to think... How will MOVE get incorporated? This game will be EPIC with MOVE. Like Pong, etc.... Damn!!! The possibilities are so sweeeet!
