Something about the fluidity of that demo makes it look like a pre-rendered concept video, rather than actual gameplay. Perhaps early testing wasn't so promising.

It could be done through motion controls depending on the accuracy of the Move controller.

While the footage is a target render and doesn't properly portray what the real game would have been like...

You are probably right.  Either that, or they thought it was too ambitious for its own good.

well, target render videos or pictures aren't generated with a game engine, but with professional video creating tools on a render farm (with lots of PCs working to generate the images, often not even these can handle it in real time)
