I'm sure there are others that are getting burned out on FPSs.  Don't get me wrong there have been some pretty incredible ones released this year but it would be nice if other genres had more high quality games made as well.  Here are some of my dream games, I'm curious what some of yours would be. 

Wing Commander 7 - We really don't have any epic space flight combat sims and it would be amazing to see what this game would look like with next gen graphics.  They could probably start from the first game in the series and do a re-imagining of it.  One can only dream of what the carrier ships would look like in the game.

Advanced Dungeon & Dragons RPG - Something like a Baldur's Gate 2 in scope and design but with Mass Effect production values.  It would likely be shockingly expensive to make so it's doubtful we'd see something like that but it would be amazing if done right.

New Castlevania 2D game - I think a designer at Konami has already mentioned they're considering such a game on the 360 so it likely has the best chance of being made of the games on this list.  It's hard to imagine how beautiful such a game could be if it took full advantage of the 360.

Psychonauts 2. Make it so.

Also, anything Jet Set Radio-related. Or Smilebit-related in general, for that matter.

They live on in my heart. Sure, they were subsumed by Amusement Vision post-merger, but I can still hold out hope that some of their talent survived.

Kotor 3, Freelancer 2 and The Witcher

Shenmue 3 - this story really needs to be completed.

Jet Set Radio 3 - anyone that argues that videogames cannot be art hasn't seen this series in action.

Phantasy Star V - enough with the online games give us the fully fledged sequel that SEGA fans have wanted for years.

Conker 2 - Such an amusing game deserves a sequel and surely there is enough things to be parodied to make it so.

KotoR 3 - This trilogy really needs to be completed.

Prince of Persia sequel - I would love to see what could be done with this wonderful action/platform series with the additional power of the 360.

Galactic Civilizations 3
Falcon 5.0 w/ AC6's flight stick compatability
Betrayl at Krondor 2
A Civilization that isn't dumbed down (see GC3)
Dai Senraku 8

Probably a ton more....Those would be my "must buy" games if they ever re-invented those PC or old Xbox games onto X360.

I'd like to see a well made game for my kid that's not a movie tie-in, or a licensed product. So far, all of the games she plays on the 360 come from the live arcade. Oh well, that's why we got a Wii. (or at least, that's what I tell her......That Wii is MINE!)
