I remember TVs without HDMI...that's rough. Luckily they aren't very expensive these days comparatively.
Less than $200 buys a 1920x1080 LCD monitor with HDMI input these days, but if you don't have the money, make do with low image quality.
A multi out (PS AV plug) component cable is pretty much a component cable. The difference in quality won't make that much of a difference in image quality unless the cable is damaged.
The best you can do with an old 480i CRT is set the PS3 to 480p output (default) and adjust your TV as best as possible.

you need a better tv
the reason the x-box looks good on old tv's is that on the first models the x-box didn't even have hdmi so it's made for dvd standars just like dvd standars are made for old tv's. the ps3 on the other hand is made for at least 720p (you deside if thats a good thing or not) and then everything looks bad on lower res.

well if you can't get a better tv you might just have to put it back on the other tv and only play it the few hours you can
