Yes you'll be fine with 1GB. But check out the mid-range 5XXX Radeon cards too before deciding anything.
Changing the graphics card is extremely easy. Read the instructions; take one out; put one back in.
It's very much worth it as the GT 240 is underpowered and the GTX 260 is overpriced and obsolete if you care about DirectX 11.
Look at the HD5750 or 5770 as the others have said.
And I'm still saying you don't need the i7 860, you can go for something a third to half of the price and not notice with that workload.
And if you get a decent motherboard, you might be able to do the same a couple of years from now if you really need it.
2-3 years without computer knowledge..... I'd say just go for a Core i5 750 system, and make sure it's a 750, not 750s, and you should be fine.
