I played it on the PC and none of the problems mentioned on the GameTrailers exist for me. It also seems liek a lot of reviewrs are idiots. I swear I saw the line "sometimes my knives boubnce off other times they kill them in one hit, very inconsitent" seeing how armor is per-pixel hit detected that makes a lot of sense and it's quite consistent. Same with the stealth system, since it illuminates you when you shoot and a lot of enemis have nightvision/lights they don't seem to realize that it's possible that enemies see them because they suck, not because the game is broken.
Graphics really seem to suck on the 360 compared to the PC and I am leaving the option tha the reviewers are not idiots but the developers had to cut some of the more intensive calculations, such as the per-pixel hit detection armor, because the 360 couldn't handle it. I doubt that and I would rather think that the reviewers are idiots.

Played it on hard and the enemies were definitely not bullet sponges if you hit them right. All but the Librarians would die if you could get a head shot on them with any weapon and the throwing knives would 1 shot any lower enemy. Furthermore, armor really effects damage in the game, but if you want to kill things very quickly with not as many bullets use the military grade ammo, it tears things up. Also I noticed that even a Librarian on Hardcore dies with 3 thrwon knives if they all hit his head. Otherwise it's 5 knives + a few shells from the shotgun. I never quite got how you weren't supposed to kill them, I only didn't kill the sleeping ones that you have to sneak past.

I've scored a few headshots for 1 hit kills but the fact is, you can't when there are 10 enemies hitting you in the pitch black from all directions and I refuse to turn up the brightness in-game or on my TV. Can't do that in Real Life 
I've been keeping the throwing knifes for the Bandit's/Nazi's during the stealth sequences. Sometimes the knife has passed through them and it only seems to be a 1 hit kill if you hit them in the upperchest.

Get the nightvision or use your lamp. Also the knife is a 1 hit kill anywhere other than the limbs it seems and most sefinitely not the upper chest because then the knives just bounce off the armor. Also if you hit their helmet once or twice until they fall off, the durty ammo still kills in 1 headshot. The human enemies in the game were by far the easiest to handle since it only took a few bullets at tops to knock off their head gear and one more to head shot them, that is if my knife didn't hit the pelvis or the side wehre they died instantly. I had huge problems with ammo on the first 2 chapters until I realized that shooting armor with the durty bullets is absolutely useless. After that sneaking around and killing soldier in a few hits was simple as hell, even on Hardcore. The mutants were the much bigger problem since they move around too much to get a clean headshot.
The gunplay and stealth systems are just fine, the people who are playing it seem to be the problem.

That's the thing, I'm not THAT far in. (Up to riding on the undercarrige of a makeshift train) and I felt to ill to continue. I've been juggling this and FF XIII, and I'm talking mostly about the quick moving mutants (Monkey like creatures that appear in the beginning). At this point my guns are garbage (Managed to buy a Scoped Ak-47, not tried it out much yet and don't have a silenced weapon) and all of the Human enemies I have come across so far have been in stealth scenario's so I've been throwing and re-using my throwing knifes instead of running out gun's blazing and being gunned down instantly. Mostly to preserve ammo aswell. I don't know if shooting off armor is a feature on the Xbox 360 version, pehaps it is but I've yet to come across enemies with noticeable armor. So far a throwing knife to the torso works everytime.
I'm also playing the Xbox 360 version so the physics are obviously not up to scratch with the PC version and there really doesn't appear to be any aim assist, yet it's set to max by default. Also looking at a comparison of the PC and the Xbox version, the Xbox version is considerably darker. It uses a different lighting system and colour gradient.

Running on my TV set-up it's even darker but it's more thrilling and realistic that way. Night Vision will be a blessing.
