I was going to abstain, but once I realized that "Zombies" theme COULD be specifically PLANTS VS. ZOMBIES, I have to vote

but only because I want to campaign for a Plants Vs. Zombies theme.
Now, what would the roles be?

Oh man I've got a few ideas on possible roles ...

[edit:  I think I've come up with a lot of interesting ideas, but they would have to be run past someone with a good idea of how to strike game balance.  And many of my ideas would not be used, and some of them would be changed, so I wouldn't be at THAT much of an advantage.

Any game can be a crazy hatmoza game... you just have to be in it! :P

A vanilla game typically has a few mafia (no special abilities beyond night kill), a doctor, a cop, and maybe 1 extra roll, but a very basic game. I would suggest you play the vanilla game unless you don't mind getting lost and possibly killed night 1 due to crazy people. Also, this is your first game, so again go with vanilla.

The other game will be essentially a mafia game with a twist. Add any role you can imagine, or from a set of "standard" roles that people have been using for a while. The game is a lot more complex as people can make up roles to try and get away with stuff, and no one really knows if it's true or not.

I'd prefer "spirited" but I'll play vanilla if it needs extra people.

What are the rules of a zombie themed game?

The core rules of mafia don't change (uninformed majority vs informed minority) however there will be a large zombie theme throughout the whole game as well as special zombie-flavored roles.  Though, because it's only 9 people, there is a limit to how much of that stuff can go on without tipping the balance in favor of one team.  Expect a lot of creative roles that are fun but mostly harmless or useful with limited uses.
