Panzer Dragoon on the original Saturn, the demo was so good that the overall game was a bit of a letdown. The one level I played on the demo was arguable the best level in the game for me. Everything about it was just plain awesome.

I agree with The Force Unleashed demo. I played that a ton. I also enjoyed the R&CF:ACiT Clank demo. (Sadly, I haven't been able to get the actual game yet, as I have no money, I didn't get it for Christmas, and my PS3 is at my parents' house.)

EDIT: Oh, I can't believe I forgot about inFamous. That's another great one.
