A while back I beat the campaign and stopped. Is there anything after that other than I assume catching Deadshot?

Depends on how many side missions you completed in the process. There's the riddler trophies, dr. Freeze's wife, probably some other junk that I am forgetting, haven't played it in a long time.

as you mention catching Deadshot, then there is the Hush, Aazrel, Zaz, Bane, and Mad Hatter side missions,

at the end of his mission he changes his face to Bruce Wayne's and leaves Arkham City
