All those characters you mentioned were made by japanese. So......it really doesnt make sense.
I mean the Japanese made anime and they look more "white" than Japanese. It the type of art or character design they like. I dont think its really meant to target the american or white audience.
And you dont actually control a human in all games.....
You might be thinking to much with this I mean I dont think even the devs themselves go into too much thought about the race. Especialyl since alot of them are from fictional planets and all that. Theyd just like to make a cool character.
