So GOG is doing it right yet they're not profitable?

Sadly... yes. GOG is now owned by one of the founders of CDPR, Michal Kicinski, who is no longer affiliated with them. He had a hand in the original creation of GOG, so he still believes in the original vision behind his creation, but GOG is very much a labor of love for him.

When it comes to the PC market, people overwhelmingly choose convenience over ownership.

The thing of convenience on Steam is real, but other thing that is real is that, while yes, you're still purchasing license on Steam, the other...let's say, convenience, of PC gaming is pretty much a guarantee that you own your game, no matter what happens on/with Steam - that is not something you can have on any other platform, due to closed garden approach (bar Android maybe), and probably one of the reason PC gamers are at ease with whole ownership/licensing thing.
