There is no second char going over with Kratos like Atreus in any of those games, so you mean we play with 2 Kratos? That would also break any kind of immersion for the story cutscenes, one Kratos just disappearing.

Also, those games have boss batles designed to be spectacles, specially on 2 and 3, so that would be a very hard thing to adapt, otherwise one person would just stand there and look when the scripted attacks are happening.

If it's only an separated arcade mode as you said, but not the entire actual game, so having no story at all, just combat, well, maybe. Would be funny to have a side scroller beat'em up like Tekken Force, maybe unlocking characters as you proceed in the main game, so first only Kratos but then you can pick other gods too and they would be removed as bosses on that mode and changed to a titan there.

I don't think throwing in a 2nd character for co-op purposes ruins any immersion, especially not for games like the GoW trilogy which are not heavily infused by their narrative components. You can play with your friend and the story continues with just Kratos. Resistance did this. Returnal did this. Lego Horizon does this (to some capacity). 

If someone cares enough about the story they'd play the game solo first. Afterwards, it wouldn't really matter if you experience co-op or not.

The QTE situation is also easily solved via an option: only first player, either player who hits the button first, or both players have to hit the right button.
