The design of the unit.
Sony went with a smaller chip, that clocked abit higher, saving some costs on the chip.
It comes down to design choices, between the manufactures.
Those theoretical ~18% more Tflops, the Series X has, adds costs.
Mass production, is also a thing..... the more units you make, the cheaper you can typically buy individual parts.
Having 1 main unit, instead of 2 (in the S+X), and selling like 3-4 times the amount of hardware your competition does, allows you to go lower price.
Xbox has more components, and split memory... ect.
I don't think sony sells at a loss either, but they probably don't have someone saying "we need 30% margins" either.
Its just different philosophies about how to do x,y,z.
