WDYM by "will"? With very few exceptions (https://en.wikipedia.org/wiki/Category:PlayStation_5-only_games), which are really just timed exclusives, they already are a third-party publisher. Will they ever port their back catalogue to other platforms? Most likely (in one form or another), but keep in mind that even Xbox hasn’t done so yet.
If you mean Sony allowing third-party stores on PlayStation hardware — I doubt it. Unless SteamOS and the Xbox PC format get insanely popular and the dedicated console market starts to dwindle. Who knows! Time will tell.
