Metal Gear Solid: Peace Walker is my personal favorite. But there's several others that definitely come close.

Wipeout Pure
Both God of War PSP games (Chains of Olympus and Ghost of Sparta)
Resistance: Retribution
Daxter

I never had a PS Vita though.
