Only recent soulsborne I've played is No Rest for the Wicked, which has honestly been really good with such a gorgeous art style but can't really say how it'll end up considering it's still in Early Access and the devs are adding more to the story and making feature changes that the playerbase either loves or hates. So still a lot can change with the game over time.
Other than that, Cuphead and Ninja Gaiden Black as honorable mentions if those are considered soulsborne
