There are a few other attacks that hit but you've got pretty much the bulk of it covered already then. Yeah, flying enemies can be annoying but mercifully they are rarer later in the game.

Have you tried classic mode?

Yea I started off with classic mode. I didn't notice the flying monsters as much during the main game in general. It was more when I was exploring the world. Once I put Barrett on my team it was a non issue really. I just tried to do it with other characters and it was a PIA. Especially because I originally started off my team with Tifa, Cloud, and Aerith which just wasn't working for me in general. Once I removed Aerith and added Barrett things got much easier for me.
