Xbox 360 is the best option for compatibility but some of the newer consoles have the advantage of playing select older titles at higher resolutions and framerates.

Xbox 360 Compatibility List (462 Xbox and all 360 titles)

XBO/Xbox Series Compatibility List (63 Xbox and 633 Xbox 360 titles)

Recent consoles and there specific advantages:

Xbox One - Can play the compatible titles basically the same as they were on the original consoles
Xbox One X - Some XB/360 games are "xbox one x enhanced" increasing their resolution to 4k
Xbox Series S - The Xbox One X enhanced BC titles run at 1440p, some BC titles like Fallout 3 received FPS Boost making them run at 60 instead of 30.
Xbox Series X - The Xbox One X enhanced BC titles run at 4k, some BC titles like Fallout 3 received FPS Boost making them run at 60 instead of 30.

And of course the Series S does not have a disk drive so for your purposes is useless. The Wikipedia article for XBO/Series linked above also states which games are Xbox One X enhanced and have FPS Boost support.
