I actually prefer VIII, probably because of the unusual classes/races the game has. I mean, name another game where you can have a party consisting of a Troll, a Dark Elf, a Vampire, a Minotaur and a freaking Dragon?

The thing I dislike most about VIII is the balancing (Vampire useless, Minotaur borderline too, Dark Elf busted, Dragon super busted), but that was already an issue with the two ones before (Not much of a point getting a warrior in VI while the Thief and Cleric are overpowered in VII and the Ranger absolutely useless). 

John Van Canegem should never have sold his company to 3DO, and he never got what he made the deal for in the first place (an MMORPG, yes he was dreaming of it in 1994 already!).

I do remember VIII having "weird" races, but I remember it being weaker overall than VII and VII. It was such a long time ago though, I really wish I had the time to replay them all, but I remember, back in the days, it was taking me forever to complete them, especially with all the mapping of towns by hand (though I guess all the maps are available now on net, but that would feel like cheating).
