All of those things would print money.

Shoot, a GameCube Classic would print a lot of money. The problem is that the games are hundreds of megabytes and some up to 1.5 GB. Nintendo would probably have to put in at least 32 GB of flash memory. 8 GB wouldn't cut it at all. 

And a Wii Classic would run into similar problems, in addition to the Wii Remote being costlier than Nintendo would want to deal with. 

Sadly we are in the era of subscriptions... Nintendo wouldn't want to cannibalize it's Nintendo Switch Online service.

Also, Nintendo 64 is actually fairly hard to emulate accurately and quickly... And doing that on low-end ARM chips is extremely difficult... You are actually better emulating Nintendo 64 Virtual Console games in the Gamecube/Wii emulator "Dolphin" than running Project 64 or Mupen.

Storage isn't much of an issue these days either... NAND has never been cheaper, you can buy a 512GB SSD for about $25 USD these days, 128GB SSD for about $12 USD.

What Nintendo would ideally be better off doing is taking the Switch, throwing away the display, battery, joycons, dock and all the other little "extras" and offering a Switch TV-only online device that offers you these "classic" titles all in one place via the Switch online subscription.

Then again, Nintendo might close down the Switch online service in a few years anyway if the WiiU and 3DS are any example leaving such a device as a useless brick...
