I feel like a lot of that is just recency bias. Games and ports of games have been released in a broken state since forever. Back then they'd just be called bad games but now there are patches to attempt to fix them.

Have more games been rushed into the market counting on the possibility of day-one patches? That I don't know... you'd need an observational study to make any assessments on the matter and even then there'd be no proof the games would be delayed instead of launching anyway.
