I'm 99% sure I'll go with a 7600X because it's almost 100€ less than a 13600K and, while the later is very good, it's not good enough to justify the extra cost.

My only problem is the motherboard. I have decided almost everything else, but I'm stuck in that stage of the planning because I always end eyeing a X670E part, and paying more for the motherboard than for the CPU feels wrong.

I am going to assume you are just building a moderately equipped rig and just throwing a little bit of money at it every few years?

Otherwise, I would personally consider the Ryzen 7700/7700X to be the go with it's 2x extra cores... Would offer much longer system longevity... I had a 6-core rig in 2010, coming up on 15 years soon... And whilst that is fine today, I feel in a few years time it will struggle, especially if you do any multi-tasking... Or play a ton of CIV.

Don't be afraid to spend big on an AMD board, I always have, you are paying for features, plus you keep it around for much longer, AM6 is many many years away.

Something like that. The idea is to get the basis of a new system and take advantage of the longevity of AMD's platforms to upgrade the CPU down the road. Plus also getting a new GPU once AMD/Nvidia or even Intel release something worth it at a reasonable price point (this one will take a while). But that's mostly it, I'm not planning to change the RAM or and other bits.

I've said a few times in the thread that I'd prefer to go with an 8-core CPU to ease my mind. But given the cost of motherboards (by the way, GamersNexus has a rant video about the price and lack of features of new boards) and a 32GB of DDR5 memory kit (I know it's not enough for you, but I'm not such a power user as you are), plus several extra parts like a new CPU cooler and a couple of NVMe drives, I have to make some cuts. That's why I've decided to go with a 7600X and upgrade to an 8-core part in a few years (say 9800X or 10800X or whatever) when they go down in price.

After all, while 6 cores may not be a lot to you, you have to keep in mind that I'm running an i5-4670k CPU. That's 4 cores and 4 threads. Compare that to the 7600X with 50% more cores, three times more threads and a +50% IPC increase plus the extra speed. It wil be a big upgrade for me.

Finally, when it comes to spending big on a motherboard, these are the prices of the ATX sized X670 motherboards in the 3 stores I'll get the different bits from, listed by price:

Only 3 boards have the 7-segment display (I had no idea it was called this way), the Asus ROG Strix X670E-E Gaming Wi-Fi, Asus ROG Crosshair X670E Hero and the MSI MPG X670E CARBON WIFI, and none of those goes below the 500€ mark.

Leaving aside the "well priced" Gigabyte X670 Gaming X AX, I've had two Gigabyte motherboards in my life and both have given me problems, therefore no more Giga boards for me, and seeing the difference in price they have, my apparently better options seem to be the Asus TUF Gaming X670E-Plus or ASRock's X670E PG Ligthning and X670E Pro RS products... and they're 100€ more than the CPU itself .

I'll have to give the B650 boards another look...

Please excuse my bad English.
