True. Source 2 is a bit eh when compared to other modern engines. Its just that, at this point idc about all that so long as they keep releasing quality games. Valve were seemingly on a hiatus for so many years are were super slow to get anything out until recently. So much so I'd rather them work on things I want to play, than mess around too much with engines. And so I'm just glad we're finally getting some new games from them. And who knows maybe Valve can count to three and we get a new L4D, Portal and HL3 in our lifetimes xD

Also been waiting for a proper update for CS for years and really happy we finally got one. So maybe bias comes into play lol.

Valve is just a very very small team. - Their flat organization during the 2010's is just a very inefficient method to allocate work to employees as employees will naturally gravitate to work they want to do, rather than what needs to be done... And if you don't have everyone on the same page, then nothing gets done.

360 employees to build games, build game engines, build Steam, support Steam... Work with 3rd parties.
But also output gaming hardware like handhelds, desktops, controllers? That's actually impressive when you think about it... But it will always mean that game output will be slower.

With a new build, you may as well look into getting Zen 4 and AM5. You can get a 7600 for under £189 with code on Ebay. Which is pretty crazy as it mostly has the same performance as a 5800X3D at 65W, and you have the option to slot in a Zen 5 CPU down the line.

I'm 99% sure I'll go with a 7600X because it's almost 100€ less than a 13600K and, while the later is very good, it's not good enough to justify the extra cost.

My only problem is the motherboard. I have decided almost everything else, but I'm stuck in that stage of the planning because I always end eyeing a X670E part, and paying more for the motherboard than for the CPU feels wrong.

I am going to assume you are just building a moderately equipped rig and just throwing a little bit of money at it every few years?

Otherwise, I would personally consider the Ryzen 7700/7700X to be the go with it's 2x extra cores... Would offer much longer system longevity... I had a 6-core rig in 2010, coming up on 15 years soon... And whilst that is fine today, I feel in a few years time it will struggle, especially if you do any multi-tasking... Or play a ton of CIV.

Don't be afraid to spend big on an AMD board, I always have, you are paying for features, plus you keep it around for much longer, AM6 is many many years away.
