I really like all the changes they made to the maps from Splatoon 2 in Splatoon 3. Really changes the way you navigate them and strategise. The changes to some of the ranked modes (now anarchy battle) are pretty neat too. The different leveling system makes it so that loosing doesn't give me so much anxiety even if it takes much longer to gain a level (still at B-).
