I think he wanted to test the default settings that the devs put in for both that is out of the box since most people will just turn on FSR or DLSS and start playing instead of messing with the settings. However setting the sharpening to 0 isn't the perfect solution either by the looks of it so it's somewhere in the middle.

I am sure he will do follow up videos where he will tweak the sharpness slider. From what I hear, DLSS also has a sharpness pass but the devs didn't bother enabling the sharpening pass on DLSS so in some situations, DLSS actually looks a bit more blurry than FSR 2.0 + sharpening filter.

Tbh the devs kinda did a woopsie on both. They should have dialed down FSR 2.0 default sharpness to like 3-5 and increased DLSS sharpness.
