So... Doing the rounds at the moment is the rumor that Ryzen 7000 APU's will beat a Geforce 3060.

It's entirely based on flops.
In the real world, the 3060 will be faster because it has orders-of-magnitude more memory bandwidth. 360GB/s vs 100GB/s for Dual Channel DDR5 6000.
Memory bandwidth influences fillrate which is going to be the bottleneck at even 1080P.
This is why we should ignore biased sources like Red Gaming Tech.
