Skyrim Anniversary Edition is just DLC for Skyrim Special Edition. The PS5/XSX performance of Skyrim Special Edition is identical to Skyrim Anniversary Edition, so your video in OP applies to both.
Maybe easier way to look at it:
For people who don't own Skyrim: $50 = Skyrim Special Edition + Anniversary Upgrade.
For people who own Skyrim: $20 = Anniversary Upgrade.
For people who own Skyrim: $0 = Skyrim Special Edition next-gen performance update for PS5/XSX.
Owners of Skyrim Special Edition and Gamepass Subscribers get the PS5/XSX upgrades for free, they can pay $20 for the Anniversary Upgrade DLC.
As this thread is about performance the added content of Anniversary isn't relevant. Special Edition and Anniversary Edition perform identical.
Skyrim Special Edition (PS5/XSX) released the same day as Skyrim Anniversary Edition (PS5/XSX) so that is why it confuses people a lot. Anniversary is just some extra quests and items.
