The original Skate is backwards compatible. I remember wondering why Skate 1+3 were on but not 2.
As for games I wish had made the cut...

Sonic & Sega All-Stars Racing
PGR 1-4
The Simpsons Game
The Simpsons Hit and Run
Blinx 2
Burnout 3
Rayman Arena
Jet Set Radio Future
Most of these couldn't be done due to licensing, Rayman, Blinx and Sonic & Sega could all make the cut though.
