Keep at it, eventually you wont feel anxious at all, given the practice and the "mundanicity" of it, given that you would have gone through that multiple times.
As for opening lines, why not start with a subject that you like? Not very different from amking a thread here. See things she likes that you have in common, and just start the conversation with a question like " So how about that match the other day huh? That was a really horrible move by that team. I love watching football, but that makes me want to go play for them!" or something like it
Better than start with a simple hello, or trying to be funny.
