I am kind of split on this, I have never owned a Jak & Daxter game but I have played a friends copy before. I enjoyed it. I loved Uncharted, it was just an awesome great game IMO. That said, I think having a new Jak on PS3 seems like it would add more diversity to the game library. So maybe Jak edges out Uncharted 2 IMO.
