Because the graphics won't be that much better compared to the 8th gen. Honestly, I didn't think the Unreal Engine 5 demo looked much better than something like Uncharted 4, honestly.What blew me away on the demo was the lightning(especially the reflection) and the sound reveberations. God, that was so awesome.

You already got the reply that lightining is graphics. The UE5 was very much more impressive than UC4 on the graphical side perhaps you need to put both side by side... even people that don't care about graphics or thought that PS3 or PS4 level was already enough got very much impressed.
