Witcher looks fine, but Hellblade and Alien Isolation are one of the most impressive ports on Switch with a realistic style like Witcher or Wolfenstein, but the limited level design of Hellblade makes it easier to maintain high resolution and details. Hellblade looks almost as good as the PS4 version and Alien Isolation looks even better than the PS4 version (because the porting team used more modern techniques for Switch).

A RE3 port for Switch is technically possible and would make total sense but Capcoms decisions are most of the time not based on rational thinking. At the moment some decision maker at Capcom are deeply connected to Sony (it is common in japanese gaming industry to have deep connections to one company, especially for companies that are led by older people) and Monster Hunter was a big success on PS4/PC, so it is hard for the more straight business thinking people at Capcom to start Switch projects/ports) but this will eventually be overcome and most new games will be multiplatform.

PS4 sales are not good in Japan and will sell much less there than PS3 lifetime numbers, even so it got all the big japanese games, so there will be not much confidence in the PS5 to sell games in Japan and this is why Square felt panic and made the DQ game for 3DS and later the definite version for Switch.
