I think 720p looks a little tired on big screen TVs - you can get away with it on a smaller screen like the Switch but not on 65 inch OLEDs and the like. Super Mario Odyssey still scales up decently and that is 900p, I think that's pretty much the floor these days. I think 1080p is fine and anything more than that is a bonus but it can't come at the expense of frame rate....
