Even removed from the novelty of the time I think Ocarina's bosses are just pretty awesome; a serpentine dragon with a flowing mane of fire, a creepy one-eyed parasitic arachnid, A huge volcanic dinosaur...

Ocarina had some great bosses. My favorite boss of the N64-era, by far, was "Goht", the snowpeak temple boss. Since you kept resetting the time in Majora's Mask, you were able to re-fight bosses multiple times, and I remember fighting this boss over and over again. Rolling around the arena in goron form was so satisfying.

OoT is overall a better game in my opinion, and much more epic given there are so many more dungeons (and therefore, bosses). Yeah, I understand quality over quantity, etcetera, but Majora's Mask was created in one year by a smaller team than OoT (just did a quick Google search), and if they were able to create that game in one year, imagine if they spent two years on it and doubled the dungeon count.

As for TP, I actually replayed it pretty recently (within a year or two), and other than BotW, TP is probably the largest Zelda game ever. I can understand why people love it so much. My only complaints with TP are the size of the overworld and the part of the quest where you need to search the world for fragments (can't remember what it was I had to search for). Otherwise TP is another excellent Zelda game. Even though I played it recently, I can say the bosses don't stick out in my mind, but that doesn't mean they weren't fun. I'm sure if I looked each one up I would immediately recall them. The spinner boss is certainly one that I remember, but I remember being frustrated more than anything. The final fight with Ganondorf was actually pretty tough, and I almost died even with several bottles. He hits hard and was difficult to figure out what I was supposed to be doing.
