When I think of boss battles I think of the Soulsborne games, and most of my top 10 consists of those battles. In particular, I have some fond memories of my battles against Grey Wolf Sif and the Gargoyles in DS1, Vicar Amelia and Father G from BB, the Dancer and Pontiff Sulvayne from DS3, and Fume Knight (mostly because of its difficulty) in DS2. Top pick for Sekiro would probably be Genichiro.

I had a lot of fun beating Yoshi's Crafted World with my daughter. At the time, she was decent for a five year old, but I still carried us through most of the game. But the final boss requires both players to coordinate their attacks (as he will block whichever side of his body you attack, leaving his other side open), and I could tell my daughter felt very well accomplished since she did her part well. I wish I still got half the excitement from beating a game as I did when I was young.

Mario Odyssey had some amazing boss fights, but I don't know the game well enough to know their names. But the ones that immediately come to mind are the bird in the lava bowl and the cube machine with the broodals. Bowser fights were great as well.

Oh man, Cuphead... A game that is almost entirely based on boss fights, and almost every encounter was well-made. My favorites being the beehive queen, and the clown that turns into a merry-go-round

Many years of taking meds for anxiety has caused my memory to dwindle, so I have a hard time recalling some of my favorites, so I instead chose to just list a few that came to mind).
