Sure, why not. If they really made an effort and reworked some stuff Switch port can look fairly decent.
Witcher 3, to begin with, has quite a few things you can tweak outside of settings, via ini files, so that alone will make it run on things it's not supposed to run at (back in days, I had 7970 in my rig and 7770 (that's somewhat slower than XOne, for reference) was in my wife's - it took some fooling around to make it run at 30fps, but it worked and looked fairly decent).
